Virgin coconut oil is the richest natural source of Medium Chain Triglycerides (MCTs), which is a medium-chain fatty acid (MCFA). Most of coconut oil's health benefits come from medium-chain fatty acids. Medium-chain fatty acids consists of caprylic (C8:0), capric (C10:0) and lauric (C12:0) acids.

The most abundant medium-chain fatty acid (MCFA) found in coconut oil is lauric acid, which is considered responsible for many of coconut oil's health benefits. Coconut oil is about 50% lauric acid, and the only other abundant source found in nature is in human breast milk. The value of lauric acid has been widely studied and has shown multiple health benefits. The medium-chain fats in coconut oil are similar to fats in mother's milk and have similar nutriceutical effects. Babies make monoglyceride monolaurin from the lauric acid they get from their mothers' milk and is the same substance that keeps infants from getting viral, bacterial, or protozoal infections.

Dr. Mary Enig, a Ph.D. nutritionist/biochemist and one of the world's leading authorities on fats and oils, states, "Lauric acid in coconut oil is formed into monoglyceride monolaurin in the human or animal body. Monolaurin is the antiviral, antibacterial, and antiprotozoal monoglyceride used by the human or animal to destroy lipid coated viruses such as HIV, herpes, cytomegalovirus, influenza, various pathogenic bacteria including listeria monocytogenes and heliobacter pylori, and protozoa such as giardia lamblia. Some studies have also shown some antimicrobial effects of lauric acid."*

Coconut oil also contains capric and caprylic acid, which have similar properties and are best known for their antifungal effects. Like lauric acid, capric acid helps balance insulin levels.

The unsaturated oils in some cooked foods become rancid in just a few hours, even at refrigerator temperatures, and are responsible for the stale taste of left-over foods.
